This recipe is from “simple and easy” category, or more precisely – “simple, easy, and delicious” :) Well, it is obviously easy if you happened to make puff pastry in advance, or decided to go with a store-bought puff pastry (in this case, make sure it’s a good quality all-butter puff pastry). I’m planning to serve these palmiers along with cranberry and orange mousse. But, it will be my next post (I apologize for the delay but I do experience some lack of time recently, as well as some flu).
Makes about 5 dozens
Ingredients:
- 1 lb puff pastry
- 1 cup granulated sugar
- 2 tsp cinnamon
- Zest of 1 large orange
Preparation:
Center an oven rack and preheat the oven to 400F. Cover a large baking sheet with parchment or a silicone mat. Set aside.
Combine the sugar, cinnamon, and zest together in a small bowl, stir well with a fork.
Sprinkle some of the sugar mixture over a working surface, then roll one half of the puff pastry into a 10-inch square. Sprinkle more sugar evenly over the pastry and roll the rolling pin lightly over the surface to adhere the sugar. Fold in two opposite sides of the pastry square so the sides meet in the center. Sprinkle some sugar, and repeat the folding. Sprinkle more sugar again, then fold one half of the pastry over the other. Cover loosely with parchment and place in the freezer to firm up, for about 30 minutes.
With a sharp knife cut the chilled roll crosswise into ¼-inch-thick slices. Dip the cut sides of each piece in the sugar mixture and arrange, cut side down, on the prepared baking sheet.
Bake the palmiers in batches until golden and caramelized on the bottom, about 15 minutes. Turn the cookies over (be careful, the caramel is extremely hot and dangerous!) and bake until golden on the other side, about 7 minutes more. Transfer the baked cookies on a rack and cool completely.

Thank you for posting this delicious sounding recipe. I’m wondering how you store any leftovers? (imagine that…leftovers….what is that????) I love the hint you gave as to how to reheat them (make crunchy again)….anyway….much as I’d like, all alone and no one to share them with. Thanks ever so much. VERA – Thank you for taking the time to answer my question. I didn’t make them but I will certainly try again now that I know they can be refreshed for a few minutes and be crunchy again.
I forgot to ask if the recipe for the sugar/cinnamon/zest given was for one sheet of pastry…or does the second sheet require another sugar, cinnamon, orange mix?

Annabelle, you can bake them a day in advance. To refresh and recrisp them, place the cookies on a cooling rack set over the baking sheet and put in the 325F oven for a few minutes (4-5 minutes should do the trick). Watch the oven, it’s easy to burn these cookies.

I know this reply is coming in years after the post but I’m wondering if they can be made a day ahead and still be crunchy? Should they be frozen and then re-heated? Any help in preventing last minute work? Thanks….great sounding recipe.

Thank you for the recipe, they were delicious but they unrolled a bit when they were in the oven and alas didn’t look as pretty as yours. Perhaps mine needed more time in the freezer first? But they were yummy :-)

mrsblocko, I am glad you and your daughter loved them! Ovens vary, maybe your temperature was a bit higher. Or maybe you used dark baking sheets?
As for the baking sales, I prefer to make well-known treats like chocolate cookies or cupcakes. People are often very reluctant to try something new.

Thank you for this recipe. I made these for a bake sale and I was so surprised they didn’t sell. My daughter and I loved them! I can’t figure out why mine got so much darker than yours. Maybe because I used store bought pastry?

My husband and I were away this past weekend to Ithaca. We saw these all over the place. I wanted to try one but sadly I am usually disappointed with store bought goodies as they are usually stale.
