These are wonderful and irresistible. I’m not promoting fried food here, but it won’t hurt to treat yourself once (or several times) in a while.
The recipe is from “Chocolate Holidays”.
Serves 6
Ingredients:
- 15 oz ricotta
- 3 eggs
- ½ cup all-purpose flour
- 2 tbsp melted butter
- Grated zest of 1 orange
- 1/8 tsp salt
- 1 ½ oz semisweet chocolate, finely chopped
- Vegetable oil for, for frying, about 3 cups
- ¾ cup honey, warm
Preparation:
In a medium bowl, mix the ricotta and eggs with a fork. Add the flour and mix just until incorporated. Add the butter, orange zest, salt, and chocolate and stir just until thoroughly combined. Batter may be prepared to this point, covered, and refrigerated up to 2 days in advance.
Either fry the fritters up to 2 hours in advance of serving time and serve them at room temperature (they are still delicious), or fry and serve them hot or warm.
In a wide skillet, heat about 1 inch of oil over medium heat to 350 F. Carefully add rounded tablespoonfuls of batter to the hot oil. Do not crowd the fritters. Fry until brown, turning them often with a tongs or a slotted spoon. Transfer the fritters to a rack set over a baking sheet. Repeat until all the batter is fried. Put the fritters in a wide bowl, drizzle with the warm honey and serve.
